Sausage and Rice Gumbo

Ingredients:

- 1 cup Chico Rice's Brown Milled California Japonica Rice

- 1 lb andouille sausage or smoked sausage, sliced into rounds

- 2 tablespoons vegetable oil

- 1 large onion, finely chopped

- 1 green bell pepper, chopped

- 2 celery stalks, chopped

- 3 cloves garlic, minced

- 2 cups chicken broth

- 1 (14.5 oz) can diced tomatoes

- 2 teaspoons Cajun seasoning

- 1 teaspoon dried thyme

- 1/2 teaspoon paprika

- 1/4 teaspoon cayenne pepper (adjust to taste)

- Salt and black pepper to taste

- 2 bay leaves

- 2 cups okra, sliced (fresh or frozen)

- Chopped fresh parsley, for garnish

- Sliced green onions, for garnish

- Hot sauce (optional), for serving

 

Directions:

1. Cook the Brown Milled California Japonica Rice according to package instructions, and set it aside.

 2. In a large pot, heat the vegetable oil over medium-high heat.

3. Add the sliced sausage rounds and brown them for about 5-7 minutes. Remove the sausage from the pot and set it aside.

4. In the same pot, add the chopped onion, green bell pepper, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

 5. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

6. Stir in the chicken broth, diced tomatoes, Cajun seasoning, dried thyme, paprika, cayenne pepper, salt, black pepper, and bay leaves.

7. Return the browned sausage to the pot and bring the mixture to a simmer. Let it simmer for about 20-25 minutes, stirring occasionally.

8. Add the sliced okra and continue to simmer for an additional 10 minutes, or until the okra is tender and the gumbo has thickened.

9. Taste and adjust the seasonings if needed.

10. Serve the gumbo over the cooked Chico Rice Brown Milled California Japonica Rice, garnished with chopped fresh parsley, sliced green onions, and a dash of hot sauce if you like it spicy.
